瑞記家嫂魚頭米粉 (Singapore)

Before my family went back to Hong Kong, we hopped onto the Singapore Flyer and then visited 瑞記家嫂魚頭米粉 near Lau Pa Sat. This is a famous restaurant that specializes in fish head rice noodles. Many famous actors and singers from Hong Kong have visited this restaurant, as shown by lots of pictures posted on the walls.



To start off our lunch, we got the Prawn Paste Fried Chicken. It is deep fried nicely, crispy, and not too oily. The prawn paste is made of pureed shrimp and ginger juice, which gives it a rich aroma and salty flavor.



Since we do not eat fish head (or do not know how to), we ordered some fish fillet noodles. The portion of the fish is pretty generous, but the fish slices are slightly overcooked and not as tender as I thought they would be. The fish soup base has an opaque white color. It is creamy and has a slightly sweet taste. It actually tastes a lot like the fish soup that my father-in-law makes.
